Safe Splash Swim School

Erica is now in the 2A Level since she turned 3. I wasn't sure how the swim cap would fly, but she didn't seem to mind it so much. She picked out orange goggles (also required in this class). This was her first time without Mom or Dad in the pool with her. Just her and a teacher and 3 other little girl classmates. But she did GREAT! All smiles and no tears.

We got together with some Moms friends from the MOMS Club for some lunch fun at Joe's Crab Shack. They have a fenced in outdoor play yard. Later we enjoyed some Dora cupcakes.

Summer of 2006's cake decorating classes paid off! I really enjoyed making Erica's birthday cake this year. Everything was edible. Star Mountain (you have to be a Dora fan to get it) was mini muffins, the waterfall was tinted piping gel, dirt was crushed Nilla wafers, palm trees were leaves made with green royal icing and adhered with buttercream icing on to pretzel sticks. Fun!
